Baking Feista, Cakes, Muffin and Cookies Galore

I suspended all cooking activities with T for the past months, cos I couldn't stand the sight and smell of raw food (except sashimi, hee hee...). But we made up for it in the past weeks and were busily whipping up cookies and cakes a few times a week. Now my domestic helper starts to sigh whenever she see me taking out the kitchen scale in the evening. (She the one who has to clean up the mess in the kitchen after we are done)

Here is a Oreo & Raisin Cupcake recipe that T is able to manage quite well (with some help from me of course) and we made it at least 3 times already in the past 6 weeks. In fact, she loved the raisins so much, she now keeps trying to put raisins in all the cakes we make, even chilled cheesecakes.



Pound the Oreo cookies into little pieces.










Cream butter and sugar










add eggs one at a time (don't forget to remove the shell after child drops it into mixture)

Here are some of the other cakes we made.
- Simple Chocolate cupcakes iced unsuccessfully to look like Kerropi. We made them for a colleague's birthday, this woman is crazy about Keroppi.
- Mixed berries muffins. Summer berries were on sale at the supermarket. Made these with rasberries and blueberries. I think I had about 10 of them in the last 2 days.
- Mickey and Minnie butter cookies. Time consuming, but all worth if it gets a smile from the girl
- Chilled mango cheesecake. Very tangy. Great for the hot weather. Half of the whole cake went into my tummy over breakfast and tea time.
We also tried unsuccessfully to do a batch banana muffin and chilled peach chessecake. Although they were edible, they looked horrible, so we didn't keep any photos of them.
